DOUBLE CHOCOLATE MUFFIN

  • I can never get tired of Chocolates and I love my morning cappuccino with a chocolate muffin.Chocolate chip muffins are endlessly tempting and is the ultimate comfort food, a sure shot stand-by during those stressful moments, a reliable source for that kick when life has let you down, and it is a mood-enhancer and romance-inducer in happy circumstances as well.

INGREDIENTS
  • Flour 2 kgs
  • Cocoa powder ¾ cup
  • Sugar 2 kgs
  • Baking powder 1 tbsp
  • Salt 1/2 tsp
  • Eggs 4 nos
  • Sunflower oil 2 litres
  • Vanilla essence 1 tsp
  • Chocolate chips 2 tbsp
  • Chocolate ganache/ sauce 2 tbsp
METHOD
  • Preheat oven to 180 c FOR 10 mins
  • In a mixing bowl, beat eggs with sugar till creamy and till the sugar has dissolved.
  • Add flour, choco powder, chocolate sauce, vanilla essence and baking powder to the mixture.
  • Fold in chocolate chips.
  • Flour dust muffin pans (available in any super-market) and then place muffin paper molds in the pan and divide the batter among the paper molds.
  • Bake for 15-20 minutes or until a toothpick inserted in the center of muffin comes out clean.
  • Allow to cool and enjoy with your favourite cup of coffee!
